Ghee is a premium cooking oil celebrated for its taste, nutritional benefits, medicinal qualities and has been a staple of many culinary traditions around the world for centuries, for its rich buttery taste, enticing aroma, & high smoke point, which makes it ideal for high-heat cooking. We source our Ghee, made using rich milk of the grass fed and pastured indigenous cows, from a quiet little village of Bakhrot in the Karsog valley of Himachal. Ladies at the village, boil the cow’s milk to remove it’s layer of cream and churn the cold cream with a wooden stick until water is separated from unsalted butter. The butter is then slowly melted in a heavy bottom pot over an open flame and cooked until it is clear golden in colour. During this long, slow, careful clarification process all the moisture & impurities are removed, milk solids caramelized, leaving behind hints of sweetness and roasted nuts. Immersed with the richness of health our Desi Cow Ghee is elegantly packed in beautiful glass jars manufactured exclusively by Borosil for "Estate of Wilderness". Desi Cow Ghee has deep penetrating quality where the vitamins and minerals from food cooked in ghee are drawn deep while imparting the crucial nourishments into the body. When you add spices to the ghee to cook, the flavor is carried deep into the food. Based on it's penetration properties, many herbal preparations use ghee as the carrier oil. Traditionally, ghee has been used in Ayurveda therapies, massages and as a base for herbal ointments to treat burns & rashes. Ghee has been used for centuries as a digestive and elimination aid, for energy, sexual vitality, skin and eye health, as a lubricant for the joints and for alkalizing the blood. Some facts: Ghee contains much lower levels of dairy proteins, such as casein and lactose when compared with regular butter and is a shelf-stable product. Ghee has anti-inflammatory effects and contains butyrate acid, which plays an essential role in digestive health. Ghee comprises of short, medium and long spectrum of both unsaturated and saturated fatty acids. Ghee contains Omega 3 and Omega 9 essential fatty acids along with vitamins A, D, E and K. Ghee made from organic butter is one of the highest natural sources of CLA (Conjugated Linoleic Acid). Ghee includes 9 phenolic anti-oxidants, as well as numerous other minerals.
